Pumpkin Spice Cashew Latte


This Pumpkin Spice Cashew Latte is the perfect healthy warming autumn drink. Whole cashew nuts are blended with pumpkin and spices for a quick dairy-free latte that rivals any coffee-shop version any day…with fresh whole ingredients, it is free of harmful dyes, preservatives or tons of sugar, so you can enjoy this seasonal specialty as much as you like!
10 minutes to make, it’s vegan and gluten free ∙ Makes 2

1/4 tsp fresh ginger

4 tbsp pureed pumpkin
1 pinch Black pepper
1/4 tsp Cinnamon
1/4 tsp Five spice
1 tbsp Maple syrup, agave or coconut sugar
1/4 tsp Turmeric
1/2 cup raw Cashews
1 cup prepared hot coffee or espresso

Add all ingredients to a Bullet, Vitamix, Ninja, personal blender or food processor and blend until smooth and creamy. Serve with a dollop of coconut whipped cream and a sprinkle of nutmeg!

Caution:  contents will be hot, so be careful taking the lid off your blender!
